We’re seeing the signs that Spring is arriving! The days are getting longer and mercury on the thermometer is rising. Let’s celebrate this season of awakening by treating our taste buds to something delicious. Of course, it has to be made with premium chocolate! How about a chocolate chip inspired mousse? Made with both creamy white chocolate and deep dark chocolate, Stracciatella Mousse was created as a tribute to the gelato of the same name sold in shops in Italy. Richly satisfying, it’s the perfect dessert to serve to family and friends to remind them that warmer weather is just around the corner.
Stracciatella Mousse
Servings/Amount: 8-10 servings
Ingredients:
- 2 cups heavy cream
- 4 egg yolks
- 3 tablespoons rum or hot water
- 10.5 ounces Lindt Swiss Classic White Chocolate, chopped
- 3.5 ounces Lindt Excellence 85% Dark Chocolate, chopped
Method:
1. Melt the chopped white chocolate
2. Add the rum or hot water and stir to form a smooth paste, set aside (if the paste is too stiff add a little hot water)
3. Whip the cream and reserve in refrigerator
4. Whip the egg yolks
5. Add the melted white chocolate to the egg yolks and mix until combined
6. Fold in the whipped cream
7. Fold in the chopped dark chocolate
8. Place in a bowl or individual serving dishes and cover with plastic wrap
9. Refrigerate minimum 6 hours or overnight
Tip:
Use fresh eggs when making this recipe
Serve with a dollop of whipped cream or chocolate shavings
